I managed to bake this cake despite having only a 2-in-1 microwave oven that came with the apartment. This oven has only 3 levels of heat, which don't really help while baking because you need specific degrees for specific kinds of cakes. Also it doesn't produce heat from the bottom, so I need to check and turn the cake regularly while baking. Regardless, all the hard work paid off because this cake turned out great! 1. Cake base
150gr strawberry puree (plus ~2tbsp for later)
1 tsp baking powder
1/4 tsp salt
1 1/2 tsp vanilla extract
2 large egg whites + 1 large egg
30gr unsalted butter
90gr cream cheese
100gr powdered sugar
1tbsp strawberry purée
a pinch of salt
1/4 tsp vanilla extract
Put the strawberries in a mixer to make purée. Set aside ~2tbsp for frosting later.
Mix flour, baking powder and salt in a bowl (I).
Mix milk, vanilla and strawberry purée in another bowl (II).
Beat butter and sugar in another bowl (III). Add egg whites and egg, whisk thoroughly.
Add half of (I) and whisk, then add (II). Continue to mix them, finally add the second half of (I)
Pour into a baking pan (lined with parchment paper) then bake in pre-heated oven at 175C for 30 mins (in my case which I use a microwave oven, I always use the lowest setting of heat to prevent the top from being burnt while the bottom is still uncooked).
Let cool completely. Meanwhile prepare the frosting by beating butter + cream cheese + powdered sugar + strawberry puree + salt+ vanilla extract.
Decorate the cake with frosting and fresh strawberries.
